Tasty Poha Phirni.

Poha Phirni is a quick and easy North Indian dessert, loaded with nutrients. This protein and calcium rich dish is ideal for any occasion, and requires only few ingredients.

  • Poha/ Flatten Rice – 1/2 cup
  • Milk – 3 cups
  • Sugar – 1/2 cup
  • Cornflour – 1tsp (dissolved in 2tsp milk)
  • Raisins & cashews – for garnishing.
  • Ghee – 1 tbsp

  • In a pan, add about ½ tbsp ghee and roast the poha for 1 to 2 minutes or until crisp. Once done, switch off the flame, blend the poha coarsely and keep it aside.
  • Boil 3 cups of milk in a heavy bottomed vessel on a low flame. Once the milk is boiled, add ½ cup of sugar and stir continuously until the sugar is fully dissolved.
  • Now, add the coarsely ground poha and mix it well. Cook on a low flame for 3 to 4 minutes, stirring continuously to ensure that the poha doesn’t stick to the bottom.
  • Next, add the cornflour-milk mixture, give it a good mix and cook on a medium flame for 2 to 3 minutes. Keep stirring to avoid lumps.
  • Switch off the flame once you've achieved the desired consistency. Refrigerate the phirni for about an hour, or until completely cooled. Before placing the phirni in the refrigerator, make sure it has reached room temperature.
  • In a small pan, add some ghee and roast the cashews and raisins. Add the tempered cashews and raisins as toppings before serving the phirni.
